Simple Banana Snack Cake

Banana snack cake

Ingredients

  • ¾ cup butter
  • 1½ cups sugar
  • 3 eggs
  • 4 ripe bananas, mashed into a chunky texture
  • 1½ teaspoons vanilla extract
  • 2½ cups all purpose flour
  • 1½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt

Preheat oven to 350 degrees. Grease a 12x17 inch “half sheet” sized pan.

In a large mixing bowl, cream butter and sugar until fluffy. Add eggs, beat until combined. Add bananas and vanilla and mix until incorporated.

In a separate mixing bowl, add flour, baking powder, baking soda and salt, whisk well to combine. Add dry mixture to wet ingredients, only mixing until incorporated. Do not overmix. Pour batter into greased 12x17 inch “half sheet” sized pan.

Bake at 350 degrees for 25-30 minutes or until golden brown and registering 185 degrees on an instant read thermometer.
