Sesame Soy Turkey Lettuce Wraps

Ingredients
- 1 tablespoon soybean oil
- 1 pound ground turkey
- 2 cloves garlic, minced
- ½ tablespoon freshly grated ginger or ⅛ teaspoon ground ginger
- 1 can (8 ounces) water chestnuts, finely diced
- 2 teaspoons sesame oil
- 3 tablespoons soy sauce
- ¼ cup hoisin sauce
- 2 tablespoons rice vinegar
- 2 teaspoons roasted red chili paste or sriracha
- 1 teaspoon honey
- 4 green onions, thinly sliced, divided
- Pinch of salt
- 12 butter lettuce leaves
- 1 tablespoon sesame seeds
Heat 1 tablespoon of soybean oil in a large skillet over medium-high heat. Add the ground turkey, minced garlic and grated ginger to the pan and cook for about 6 minutes or until turkey is nicely browned. Add water chestnuts and sesame oil, soy sauce, hoisin sauce, rice vinegar, roasted chili paste and honey. Cook an additional minute and remove from heat. Stir in green onions.
Add about ¼ cup turkey mixture to each lettuce leaf and garnish with sesame seeds. Serve immediately.
